The Barber family has been faming and making cheese in Somerset since 1833, in addition to farming and cheesemaking Barber's remain the only guardians and producers of a traditional starter culture collection left in the UK.
These cultures are the friendly bacteria added to the milk to start the cheesemaking process and create the flavour and character of the finished cheese. Whilst barber's continue to supply these cultures to many of the famous traditional cylindrical cheesemakers they are the only people to continue using them for making of block cheddar.
Every piece of Barber's 1833, which has been matured for at least 24 months, is labelled with the specific starter culture blend used in its production. For the last six years the milk from Godminster's dairy herd of Holstein and Brown Swiss cattle has been supplied to some local cheesemakers who then make Godminster Vintage organic cheddar on contract for us. Deliciously creamy in texture, the cheese also has the full flavour that you would expect from a vintage cheddar. Coated in a distinctive burgundy wax, the cheese makes a perfect present or a welcome addition to any party cheeseboard.
